Mussels in a Handshake sauce

Ingredients

  • 1 Medium Onion, Chopped 

  • 2 Stalks of Celery, Chopped 

  • 3-4 Cloves of Garlic, Minced 

  • Salt & Pepper to Taste 

  • 2 Plum Tomatoes, Seeded, Cored And Diced 1/2 Inch Pieces

  • 2 Cups of Dry White Wine 

  • 50ml of Handshake Digestif Bitters

  • Dash of Persian Saffron 

  • 2 Pounds of Bang Island Mussels, Scrubbed with Beards Removed

  • 1/2 Cup of Chopped Fresh Parsley
